A Humble Cheese Omelette

All my meat was frozen this morning because I did not plan ahead. Hubs is on a bratwurst kick and I could not face another brat. I’ve always got eggs and cheese, thus an omelette!

Whisk two eggs in a bowl
Add 1/2 cup of your favorite grated cheese
Sprinkle with Tony Chachere’s Cajun seasonings
Melt a tablespoon butter in an 8” non stick frying pan
Pour egg mixture into pan
Set heat on low
Once the bottom begins to cook tilt the pan all around to allow center mixture to run underneath the omelette. Do this several times while cooking. When center begins to thicken a bit fold over the omelette and allow to cook until center is done, maybe a full minute.

 Plate and sprinkle with fresh chives.

And do not tell me chives are not carnivore. I was grazing like my dogs.
