Low Carb Breakfast Pizza

This little breakfast pizza is great for guests or to make ahead and keep in the fridge. I made it for my hubs and he has been heating it and eating a piece every morning. I can’t take credit for the original recipe. I was inspired by https://culinarylion.com/recipes/keto-sausage-crust-breakfast-pizza/
But I tweaked the recipe a bit because, well just because that’s what I do.

I followed the original recipe in the link above but I used 1/2 a can of Rotelle tomatoes and green chili’s, puréed for my sauce. I also prefer bacon to ham so I cooked about six oz of bacon, rough chopped it and added to the top. Hubs asked for green peppers and mushrooms so I obliged. He’s a hard one to please especially when it comes to what he considers bread or pizza should taste like. It’s got to have the right flavor and mouth feel for him. Oh my gosh, he loved this!  That means you will also!  When making the crust I put all the ingredients in my stand mixer to combine them well.
