In my opinion chicken breast has a tendency to be dry unless it’s just a tiny bit pink inside. Marinating them helps a lot. Or wrap them in bacon. Anything wrapped in bacon makes me smile.
I used boneless half breasts and slit them so they would open like a book. Sprinkle with salt and pepper inside and out. Chop up a handful of chives or green onion tops and mince a few cloves of garlic. Scatter these on the inside of the split breast halves. Close the halves and wrap with a few slices of bacon, as much as you want. Secure with wooden toothpicks.
Preheat grill to 350, that’s about medium on a gas grill. Place breast on direct heat and close lid. Cook about ten minutes or until brown on bottom then turn and brown the opposite sides, about ten more minutes. Every grill is different so keep your eye on them. You may have to turn them more than once. These can also be cooked in the oven on 350 till bacon is brown.
