SEAFOOD CHOWDER

This is a flavorful little chowder. You can serve it as a course to a larger meal or make a meal of it.
I used frozen wild caught haddock. You could use another fish, oysters or shrimp.

Ingredients
2 pounds seafood
4 ounces bacon
1 medium onion
4 cloves garlic
1 bay leaf
1 bell or poblano pepper
1 1/2 cup cream
2 cups chicken broth
3 cups seafood stock
Salt/pepper/cayenne/red pepper flakes to taste

In a large heavy stock pot

Fry the bacon till crisp remove from pot reserve for later
Add
chopped onion, garlic, pepper and sauté till soft and a little caramelized
Add the broth and stock with the bay leaf
Simmer for one hour
Add the cream, bacon and seasoning
Simmer till hot on low heat
Turn off heat
Add the fish cut in bite size pieces, the chowder is hot enough to cook the fish
Cover let sit for 10 minutes
Serve in bowls
Garnish with chopped chives
