Venison Chili

Venison chili.

In Texas we eat chili!  I was raised on chili with beans accompanied by rice and cornbread or tortillas. Some people eat it with saltine crackers which I never understood where that came from. Now I just eat chili, sometimes with eggs.


Sauté one medium onion chopped with bacon grease or coconut oil in instant pot
Add three cloves garlic or more
One pound breakfast sausage
One pound ground venison or beef
Add
One tablespoon turmeric
One tablespoon chili powder
One tablespoon cumin
One tablespoon Italian seasoning
One can sugar feee tomato sauce
One can tomatoes and green chilies
One teaspoon salt
Two bay leafs
I pint broth, beef or chicken
Set IP to chili setting. 90 minutes

So as an after thought I cooked 1/2 pound beef liver, chopped it in food processor and added to the chili. Got my organ meat in and didn’t even know it was there.

Reseason if necessary
